The 'old school' way of levelling professions, the only way you have access to as a low level player, is significantly more difficult.

That means once your character is level 91+, it is very easy for you to level a profession up through recipes that you obtain at that level. In the current expansion pack, professions have been made infinitely easier to level up for high level characters.
